Cheese Cracker

100g grated cheddar cheese

100g cottage cheese

1 egg

50g chopped hazelnuts

200g flour (I use spelt flour)

1 Tablespoon Olive oil

(a little bit of water, if the dough is too firm)

preheat the oven to 350F---combine all ingredients together until it makes nice dough then form small balls---layer a cookie sheet with parchment paper and place the balls on it---bake for 20-25 min---to get the crackers more crispy, keep them in the oven at a very low temperature (about 120F) with a wooden spoon holding the door open so the moisture can evaporate until they reach the desired consistency.
